Seafire Steakhouse – A Reinvention Worth Savoring

Walking into Seafire at Atlantis, The Palm feels a little like stepping onto a Broadway stage set for a New York steakhouse dream. The venue has always been one of Dubai’s iconic dining rooms, but with its refreshed interiors and new sensory-driven bar program, Seafire isn’t just holding onto its legacy—it’s rewriting it.

Fire Meets Fork

The star of the night is, of course, the meat. Seafire has always taken dry-aging seriously, and the process here borders on ritual. Cuts spend 45 days in carefully controlled chambers before meeting fire again, unlocking tenderness and flavor that borders on theatrical. Our table tried the Australian Wagyu “Imperial Blossom”—a cut exclusive to Seafire—and it more than justified its billing. Juicy, decadent, and perfectly charred, it’s the kind of steak that reminds you why steakhouses exist in the first place.

But Seafire doesn’t forget its non-carnivores. The mushroom risotto, rich yet restrained, held its own as a comfort-driven crowd-pleaser. The seafood program also deserves applause: oysters from France, Japan, and Dibba Bay in the UAE, plus a towering seafood platter that turns heads the moment it leaves the kitchen. Pro tip: add the caviar. Life is short.

Desserts swing between playful and luxurious. The Golden Bar—a theatrical smoke-box reveal of ice cream, liquid caramel, and crunch—had half the room craning their necks. Meanwhile, “The Brookie” (a cookie-brownie hybrid) struck the perfect balance between indulgence and nostalgia.



Cocktails With a Twist

The new bar setup is where Seafire flexes its creativity. Forget your standard martini—the team here wants you to taste with your eyes, ears, and even your skin. “The Banana Trade” comes with banana cream you’re encouraged to rub on your hands before sipping the cocktail; strange on paper, but surprisingly fun in practice. “The War of the Currents,” inspired by Tesla and Edison, is served in a glass that lights up at your touch—science lesson meets happy hour.

With nearly 500 wine labels and 3,000 bottles in the cellar, Seafire also caters to serious oenophiles. The pairings recommended by the sommelier didn’t miss a beat.

A Soundtrack That Sets the Scene

What seals the experience is the live music. Seafire has leaned into the fact that dining can be entertainment, and the mix of jazz-leaning sets and upbeat acoustic sessions kept the room humming without ever overpowering conversation. It gives dinner that sense of occasion, the kind you actually want to dress up for.

The Verdict

Seafire isn’t content with being “just” a steakhouse anymore. It’s a full sensory experience—sight, sound, taste, and touch—served with just the right amount of flair. The food is excellent, the cocktails inventive, and the live music makes it feel like more than just dinner out.
